Ingredients

  • Mizuna greens - 150 grams
  • Sesame seeds (white) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon

Steps

  1. Rinse the mizuna greens under cold water and trim the stems if necessary.
  2. Bring a pot of water to a boil and blanch the mizuna greens for about 1-2 minutes until tender.
  3. Remove the greens from the boiling water and immediately plunge them into a bowl of ice water to stop the cooking process.
  4. Once cooled, drain the mizuna and gently squeeze out excess water. Chop the greens into bite-sized pieces.
  5. In a dry skillet, toast the sesame seeds over medium heat for about 2-3 minutes until golden brown and fragrant, stirring frequently.
  6. In a bowl, combine the toasted sesame seeds, soy sauce, mirin, sugar, and sesame oil. Mash the sesame seeds with a pestle or the back of a spoon to create a paste.
  7. Add the chopped mizuna to the sesame mixture and toss well to coat the greens evenly.
  8. Serve the Mizuna Goma-ae in small bowls or on a plate as a side dish.
