- Red bean paste (anko) - 150 grams
- Agar-agar powder - 2 grams
- Water - 250 milliliters
- Sugar - 30 grams
- Salt - a pinch
Steps
- In a small saucepan, combine 250 milliliters of water, 2 grams of agar-agar powder, and a pinch of salt. Stir well and bring to a boil over medium heat.
- Once boiling, reduce the heat and simmer for about 5 minutes, stirring constantly until the agar-agar is completely dissolved.
- Add 150 grams of red bean paste and 30 grams of sugar to the saucepan. Mix well until the sugar dissolves and the mixture is smooth.
- Remove the saucepan from heat and let it cool for about 5 minutes, stirring occasionally.
- Pour the mixture into a mold or individual serving dishes and refrigerate for at least 20 minutes, or until set.
- Once set, gently remove the Mizu Yokan from the mold and slice into desired portions. Serve chilled.
