Ingredients

  • Red bean paste (anko) - 150 grams
  • Agar-agar powder - 2 grams
  • Water - 250 milliliters
  • Sugar - 30 grams
  • Salt - a pinch

Steps

  1. In a small saucepan, combine 250 milliliters of water, 2 grams of agar-agar powder, and a pinch of salt. Stir well and bring to a boil over medium heat.
  2. Once boiling, reduce the heat and simmer for about 5 minutes, stirring constantly until the agar-agar is completely dissolved.
  3. Add 150 grams of red bean paste and 30 grams of sugar to the saucepan. Mix well until the sugar dissolves and the mixture is smooth.
  4. Remove the saucepan from heat and let it cool for about 5 minutes, stirring occasionally.
  5. Pour the mixture into a mold or individual serving dishes and refrigerate for at least 20 minutes, or until set.
  6. Once set, gently remove the Mizu Yokan from the mold and slice into desired portions. Serve chilled.
