Ingredients

  • Daikon radish - 300 grams
  • White miso paste - 2 tablespoons

  • Sugar - 1 teaspoon
  • Rice vinegar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. Peel the daikon radish and cut it into 1 cm thick rounds, then cut each round into quarters to create triangles.
  2. In a mixing bowl, combine the white miso paste, mirin, sugar, rice vinegar, and salt to create a smooth marinade.
  3. Add the daikon pieces into the bowl and gently coat them with the miso mixture, ensuring each piece is well-covered.
  4. Transfer the coated daikon to a container, cover it tightly, and let it marinate in the refrigerator for at least 2 hours, preferably overnight for deeper flavor.
  5. When ready to serve, remove from the fridge and sprinkle with sesame seeds before plating.
