Ingredients

  • Eggplant (Nasu) - 2 medium
  • White miso paste - 3 tablespoons
  • Mirin - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Sugar - 1 teaspoon
  • Green onions - 2, thinly sliced
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplants in half lengthwise and score the flesh in a diamond pattern without cutting through the skin.
  3. In a mixing bowl, combine the white miso paste, mirin, rice vinegar, soy sauce, sesame oil, and sugar, and mix well to form a smooth paste.
  4. Spread the miso mixture evenly over the cut sides of the eggplant halves, ensuring the scored flesh is well coated.
  5. Place the eggplant halves on a baking sheet lined with parchment paper, cut-side up.
  6. Bake in the preheated oven for 25-30 minutes, or until the eggplant is tender and the miso is slightly caramelized.
  7. Remove from the oven and let cool for a few minutes before garnishing with sliced green onions and sesame seeds.
  8. Serve warm, either on its own or alongside steamed rice.
