Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplants in half lengthwise and score the flesh in a diamond pattern without cutting through the skin.
- In a mixing bowl, combine the white miso paste, mirin, rice vinegar, soy sauce, sesame oil, and sugar, and mix well to form a smooth paste.
- Spread the miso mixture evenly over the cut sides of the eggplant halves, ensuring the scored flesh is well coated.
- Place the eggplant halves on a baking sheet lined with parchment paper, cut-side up.
- Bake in the preheated oven for 25-30 minutes, or until the eggplant is tender and the miso is slightly caramelized.
