Ingredients
- Zucchini - 2 medium (about 400g)
- White miso paste - 2 tablespoons (30g)
- Heavy cream - 100 ml
- Grated Parmesan cheese - 50g
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon (15ml)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped fresh parsley - 1 tablespoon, for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Wash and thinly slice the zucchini into rounds, about 5mm thick.
- In a mixing bowl, combine the miso paste, heavy cream, grated Parmesan cheese, minced garlic, salt, and black pepper. Mix until smooth.
- In a skillet, heat the olive oil over medium heat and sauté the zucchini slices for about 5 minutes, just until they start to soften.
- In a baking dish, layer half of the sautéed zucchini slices, then pour half of the miso cream mixture over them. Repeat with the remaining zucchini and cream mixture.
- Sprinkle some extra grated Parmesan cheese on top for a crispy crust.
- Bake in the preheated oven for 25 minutes until bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes before garnishing with chopped fresh parsley and serving.
