Ingredients

  • Zucchini - 2 medium (about 400g)
  • White miso paste - 2 tablespoons (30g)
  • Heavy cream - 100 ml
  • Grated Parmesan cheese - 50g
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon (15ml)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped fresh parsley - 1 tablespoon, for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Wash and thinly slice the zucchini into rounds, about 5mm thick.
  3. In a mixing bowl, combine the miso paste, heavy cream, grated Parmesan cheese, minced garlic, salt, and black pepper. Mix until smooth.
  4. In a skillet, heat the olive oil over medium heat and sauté the zucchini slices for about 5 minutes, just until they start to soften.
  5. In a baking dish, layer half of the sautéed zucchini slices, then pour half of the miso cream mixture over them. Repeat with the remaining zucchini and cream mixture.
  6. Sprinkle some extra grated Parmesan cheese on top for a crispy crust.
  7. Bake in the preheated oven for 25 minutes until bubbly and golden brown.
  8. Remove from the oven and let it cool for a few minutes before garnishing with chopped fresh parsley and serving.
