Ingredients

  • Firm tofu - 200 grams
  • White miso paste - 2 tablespoons
  • Panko breadcrumbs - 1/2 cup
  • Green onion - 2 stalks, finely chopped
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2
  • Leafy greens (e.g., lettuce, spinach) - 1 cup
  • Sliced tomato - 1 medium
  • Avocado - 1/2, sliced
  • Pickled ginger - for garnish (optional)

Steps

  1. Press the tofu to remove excess moisture by wrapping it in a clean cloth and placing a heavy object on top for about 15 minutes.
  2. In a mixing bowl, crumble the pressed tofu with your hands until it resembles a fine texture.
  3. Add the white miso paste, panko breadcrumbs, chopped green onion, minced garlic, grated ginger, soy sauce, sesame oil, and black pepper to the crumbled tofu. Mix well until fully combined.
  4. Divide the mixture into two equal portions and shape them into burger patties.
  5. Heat a non-stick skillet over medium heat and add a small amount of oil. Cook each patty for about 5 minutes on each side, or until they are golden brown and heated through.
  6. While the patties are cooking, toast the burger buns in a toaster or on another skillet until lightly browned.
  7. Assemble the burgers by placing a tofu patty on each bun, followed by leafy greens, sliced tomato, and avocado. Add pickled ginger on top if desired.
  8. Serve immediately and enjoy your healthy Miso Tofu Burger!
