Ingredients

  • Water - 1 liter
  • Dashi stock (vegetarian) - 500 ml
  • Miso paste (white or yellow) - 3 tablespoons
  • Firm tofu - 200 grams, cubed
  • Shiitake mushrooms - 100 grams, sliced
  • Carrot - 1 medium, thinly sliced
  • Daikon radish - 100 grams, thinly sliced
  • Napa cabbage - 150 grams, chopped
  • Green onions - 2, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Mirin - 1 tablespoon
  • Spinach - 100 grams, washed

Steps

  1. In a large pot, bring 1 liter of water and 500 ml of vegetarian dashi stock to a simmer over medium heat.
  2. Add the miso paste to the pot, stirring well until it is fully dissolved.
  3. Add the sliced shiitake mushrooms, carrot, and daikon radish to the pot and simmer for about 5 minutes until slightly tender.
  4. Stir in the cubed tofu and napa cabbage, cooking for an additional 5-7 minutes until the vegetables are tender.
  5. Add the chopped green onions, soy sauce, sesame oil, and mirin to the pot, mixing well.
  6. Finally, add the spinach and cook for another 2 minutes until wilted.
  7. Serve hot, garnished with additional green onions if desired.
