- Shiitake mushrooms - 150 grams, finely chopped
- Button mushrooms - 150 grams, finely chopped
- Miso paste - 2 tablespoons
- Cooked quinoa - 100 grams
- Breadcrumbs - 50 grams
- Garlic - 2 cloves, minced
- Green onion - 2 stalks, chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- In a skillet, heat sesame oil over medium heat and sauté minced garlic until fragrant.
- Add the finely chopped shiitake and button mushrooms to the skillet and cook until softened and any liquid has evaporated, about 5-7 minutes.
- In a bowl, combine the cooked mushrooms, quinoa, miso paste, soy sauce, breadcrumbs, chopped green onion, and black pepper. Mix until well combined.
- Shape the mixture into two patties, ensuring they hold together well.
- Heat a non-stick pan over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown.
- While the patties are cooking, toast the burger buns lightly in another skillet or toaster.
- Assemble the burger by placing a lettuce leaf on each bun, followed by a mushroom patty, a slice of tomato, and avocado. Top with the other half of the bun.
- Serve immediately with your choice of side.
