Ingredients

  • White miso paste - 2 tablespoons (30g)
  • Soy sauce - 1 tablespoon (15ml)
  • Mirin - 1 teaspoon (5ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Water - 1 cup (240ml)

Steps

  1. In a small bowl, whisk together the white miso paste, soy sauce, mirin, and sesame oil until well combined.
  2. In a saucepan, bring water to a boil, then gently add the eggs. Boil for 6-7 minutes for a soft-boiled texture.
  3. Once cooked, transfer the eggs to an ice bath for 5 minutes to stop the cooking process.
  4. Peel the eggs gently and place them in the miso marinade. Ensure they are fully coated.
  5. Cover the bowl with plastic wrap and let the eggs marinate in the refrigerator for at least 30 minutes, or up to 2 hours for a stronger flavor.
  6. After marinating, slice the eggs in half and serve, optionally garnished with chopped green onions or sesame seeds.
