Ingredients

  • Firm tofu - 300 grams
  • Panko breadcrumbs - 100 grams
  • All-purpose flour - 50 grams
  • Cornstarch - 25 grams
  • Vegetable oil - for frying
  • Cabbage - 100 grams, finely shredded
  • Cooked rice - 200 grams
  • Miso paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sake - 1 tablespoon
  • Sugar - 1 teaspoon

Steps

  1. Press the tofu between paper towels to remove excess moisture, then cut into 1 cm thick slices.
  2. In a shallow bowl, combine the all-purpose flour and cornstarch. In another bowl, place the panko breadcrumbs.
  3. Dredge each tofu slice in the flour mixture, then dip in water, and finally coat with panko breadcrumbs.
  4. In a pan, heat vegetable oil over medium heat. Fry the breaded tofu slices for about 3-4 minutes on each side until golden brown and crispy.
  5. While the tofu is frying, prepare the miso sauce by combining miso paste, soy sauce, mirin, sake, and sugar in a small saucepan over low heat. Stir until well mixed and slightly thickened, about 3-5 minutes.
  6. To serve, place the crispy tofu on a plate with the steamed rice and shredded cabbage. Drizzle the miso sauce over the tofu and serve immediately.
