Ingredients
- Firm tofu - 300 grams
- Panko breadcrumbs - 100 grams
- All-purpose flour - 50 grams
- Cornstarch - 25 grams
- Vegetable oil - for frying
- Cabbage - 100 grams, finely shredded
- Cooked rice - 200 grams
- Miso paste - 2 tablespoons
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Sake - 1 tablespoon
- Sugar - 1 teaspoon
Steps
- Press the tofu between paper towels to remove excess moisture, then cut into 1 cm thick slices.
- In a shallow bowl, combine the all-purpose flour and cornstarch. In another bowl, place the panko breadcrumbs.
- Dredge each tofu slice in the flour mixture, then dip in water, and finally coat with panko breadcrumbs.
- In a pan, heat vegetable oil over medium heat. Fry the breaded tofu slices for about 3-4 minutes on each side until golden brown and crispy.
- While the tofu is frying, prepare the miso sauce by combining miso paste, soy sauce, mirin, sake, and sugar in a small saucepan over low heat. Stir until well mixed and slightly thickened, about 3-5 minutes.
- To serve, place the crispy tofu on a plate with the steamed rice and shredded cabbage. Drizzle the miso sauce over the tofu and serve immediately.
