Ingredients

  • salmon fillets - 200 grams
  • white miso paste - 2 tablespoons
  • soy sauce - 1 tablespoon
  • honey - 1 teaspoon
  • ginger (grated) - 1 teaspoon
  • garlic (minced) - 1 clove
  • sesame oil - 1 teaspoon
  • panko breadcrumbs - 1/4 cup
  • green onions (chopped) - 2 tablespoons
  • salt - to taste
  • black pepper - to taste
  • burger buns - 2
  • lettuce leaves - 2
  • sliced cucumber - 1/2
  • mayo - 2 tablespoons
  • rice vinegar - 1 teaspoon

Steps

  1. In a bowl, combine the miso paste, soy sauce, honey, grated ginger, minced garlic, and sesame oil to create a marinade.
  2. Add the salmon fillets to the marinade, ensuring they are well-coated, and let them marinate for at least 15 minutes.
  3. After marinating, preheat a grill or grill pan over medium-high heat.
  4. Remove the salmon from the marinade and sprinkle with panko breadcrumbs, pressing gently to adhere.
  5. Grill the salmon for about 4-5 minutes on each side or until cooked through and slightly charred.
  6. While the salmon is grilling, mix mayo and rice vinegar in a small bowl to make a miso mayo.
  7. Toast the burger buns on the grill for 1-2 minutes until golden.
  8. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the grilled salmon, sliced cucumber, and a generous dollop of miso mayo.
  9. Top with the other half of the bun and serve immediately.
