- Japanese eggplant - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Mushrooms (shiitake or button) - 150 grams, sliced
- Spinach - 100 grams, chopped
- Miso paste - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Heavy cream - 100 ml
- Grated cheese (mozzarella or a blend) - 100 grams
- Panko breadcrumbs - 2 tablespoons
- Green onions - 1 for garnish, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat the sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant (about 1 minute).
- Add the sliced eggplant, zucchini, and mushrooms to the skillet. Cook for about 5-7 minutes until they soften.
- Stir in the chopped spinach, miso paste, soy sauce, salt, and black pepper. Cook for another 2-3 minutes until the spinach wilts.
- Pour in the heavy cream and mix well. Cook for an additional 2 minutes, then remove from heat.
- Transfer the vegetable mixture into a small baking dish. Spread it evenly.
- Sprinkle the grated cheese on top, followed by panko breadcrumbs for extra crunch.
- Bake in the preheated oven for 15-20 minutes or until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes. Garnish with chopped green onions before serving.
