  • Japanese eggplant - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Mushrooms (shiitake or button) - 150 grams, sliced
  • Spinach - 100 grams, chopped
  • Miso paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Heavy cream - 100 ml
  • Grated cheese (mozzarella or a blend) - 100 grams
  • Panko breadcrumbs - 2 tablespoons
  • Green onions - 1 for garnish, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat the sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant (about 1 minute).
  3. Add the sliced eggplant, zucchini, and mushrooms to the skillet. Cook for about 5-7 minutes until they soften.
  4. Stir in the chopped spinach, miso paste, soy sauce, salt, and black pepper. Cook for another 2-3 minutes until the spinach wilts.
  5. Pour in the heavy cream and mix well. Cook for an additional 2 minutes, then remove from heat.
  6. Transfer the vegetable mixture into a small baking dish. Spread it evenly.
  7. Sprinkle the grated cheese on top, followed by panko breadcrumbs for extra crunch.
  8. Bake in the preheated oven for 15-20 minutes or until the cheese is bubbly and golden.
  9. Remove from the oven and let cool for a few minutes. Garnish with chopped green onions before serving.
