- Cucumber - 1/2, thinly sliced

Steps
- In a small bowl, whisk together the miso paste, maple syrup, soy sauce, rice vinegar, and sesame oil until smooth to create the glaze.
- Brush both sides of the eggplant slices with olive oil and sprinkle with salt and pepper.
- Preheat a grill or grill pan over medium-high heat.
