  • Sesame oil - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Whole grain burger buns - 2
  • Cucumber - 1/2, thinly sliced
  • Avocado - 1, sliced
  • Fresh cilantro - a handful, roughly chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a small bowl, whisk together the miso paste, maple syrup, soy sauce, rice vinegar, and sesame oil until smooth to create the glaze.
  2. Brush both sides of the eggplant slices with olive oil and sprinkle with salt and pepper.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Grill the eggplant slices for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  5. During the last few minutes of grilling, brush the miso glaze generously on both sides of the eggplant slices.
