Steps
- Peel the carrots and cut them into thin, diagonal slices, about 0.5 cm thick.
- In a small bowl, whisk together the white miso paste, mirin, soy sauce, sesame oil, and rice vinegar until smooth.
- In a pot, bring water to a boil and add the sliced carrots. Blanch the carrots for about 3-4 minutes until they are tender but still crisp.
- Drain the carrots and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for a minute, then drain again.
- In a large skillet over medium heat, add the miso glaze mixture and bring it to a gentle simmer.
- Add the blanched carrots to the skillet and toss them in the miso glaze until they are evenly coated.
- Cook for an additional 5-7 minutes, stirring occasionally, until the carrots are heated through and the glaze has thickened slightly.
- Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
