Ingredients

  • Eggplant - 1 medium (about 250g)
  • Miso paste - 2 tablespoons (30g)
  • Soy sauce - 1 tablespoon (15ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Panko breadcrumbs - 1/2 cup (50g)
  • Green onion - 2 tablespoons, finely chopped
  • Salt - to taste
  • Pepper - to taste
  • Burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1 small, sliced
  • Avocado - 1/2, sliced

Steps

  1. Preheat your grill or a stovetop grill pan over medium heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for 10 minutes to draw out moisture, then pat dry with a paper towel.
  3. In a bowl, mix miso paste, soy sauce, sesame oil, minced garlic, and grated ginger to create a marinade.
  4. Brush the eggplant slices with the miso marinade on both sides and let them marinate for about 5 minutes.
  5. Grill the eggplant slices for about 5-7 minutes on each side until they are tender and have nice grill marks.
  6. Remove the grilled eggplant from the heat and let them cool slightly. Then, sprinkle panko breadcrumbs on top of each slice to create a crispy layer.
  7. Return the eggplant to the grill for an additional 2-3 minutes to crisp up the breadcrumbs.
  8. While the eggplant is grilling, toast the burger buns on the grill until golden.
  9. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a grilled eggplant slice, sliced tomato, and avocado. Top with the bun's top half.
