Ingredients

  • Cod fillets - 300 grams
  • White miso paste - 3 tablespoons
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Green onions - 2, sliced for garnish
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. In a bowl, mix together the white miso paste, honey, rice vinegar, sesame oil, grated ginger, and minced garlic until well combined.
  2. Place the cod fillets in a shallow dish and pour the miso marinade over them, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat the oven to 200°C (400°F).
  4. Line a baking dish with parchment paper and place the marinated cod fillets on it, skin-side down.
  5. Bake the cod in the preheated oven for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Remove from the oven and let it rest for a few minutes before serving.
  7. Garnish with sliced green onions and toasted sesame seeds before serving.
