- Fresh clams - 300 grams
- Miso paste (white or yellow) - 3 tablespoons
- Dashi stock (Halal) - 500 ml
- Green onions - 2 stalks, chopped
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Soy sauce (Halal) - 1 teaspoon
- Sesame oil - 1 teaspoon
- Tofu (firm) - 100 grams, cubed
- Seaweed (wakame) - 2 tablespoons, dried
Steps
- Rinse the clams under cold water to remove any sand and grit, then soak them in fresh water for about 20 minutes.
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the dashi stock to the pot and bring it to a gentle simmer.
- Once simmering, add the soaked clams and cover the pot. Cook for about 5-7 minutes or until the clams open.
- In a small bowl, mix the miso paste with a little bit of the warm broth until smooth, then stir it back into the pot.
- Add the cubed tofu and dried seaweed to the soup, and let it simmer for another 2-3 minutes to warm through.
- Season the soup with soy sauce to taste and stir in the chopped green onions just before serving.
