Ingredients

  • Fresh clams - 300 grams
  • Miso paste (white or yellow) - 3 tablespoons
  • Dashi stock (Halal) - 500 ml
  • Green onions - 2 stalks, chopped
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (Halal) - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Tofu (firm) - 100 grams, cubed
  • Seaweed (wakame) - 2 tablespoons, dried

Steps

  1. Rinse the clams under cold water to remove any sand and grit, then soak them in fresh water for about 20 minutes.
  2. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
  3. Add the dashi stock to the pot and bring it to a gentle simmer.
  4. Once simmering, add the soaked clams and cover the pot. Cook for about 5-7 minutes or until the clams open.
  5. In a small bowl, mix the miso paste with a little bit of the warm broth until smooth, then stir it back into the pot.
  6. Add the cubed tofu and dried seaweed to the soup, and let it simmer for another 2-3 minutes to warm through.
  7. Season the soup with soy sauce to taste and stir in the chopped green onions just before serving.
