Ingredients
- Jasmine rice - 150 grams
- Water - 240 ml
- Shiitake mushrooms - 100 grams
- Soy sauce - 30 ml
- Miso paste (red or white) - 20 grams
- Mirin - 15 ml
- Sesame oil - 10 ml
- Green onions - 2 stalks
- Nori (seaweed) - 1 sheet
- Cooking oil - 5 ml
- Sesame seeds - 1 tablespoon
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pan, heat the cooking oil over medium heat and add the shiitake mushrooms. Sauté for about 5 minutes until they are tender.
- In a small bowl, mix the soy sauce, miso paste, mirin, and sesame oil. Pour this mixture over the sautéed mushrooms and cook for another 2-3 minutes until the mushrooms are well coated and the sauce thickens slightly.
- Drain the soaked rice and add it to a rice cooker or pot with 240 ml of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the water is absorbed.
- Once the rice is done, fluff it with a fork and let it sit covered for another 5 minutes.
- To serve, divide the rice into two bowls, top each with the miso-marinated mushrooms, and garnish with sliced green onions, torn nori, and a sprinkle of sesame seeds.
