Ingredients

  • Pork belly - 300 grams
  • Miso paste - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sake - 1 tablespoon
  • Sugar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cooked Japanese short-grain rice - 2 cups
  • Green onions - 2, chopped
  • Nori (seaweed) - 2 sheets, cut into strips
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste

Steps

  1. Begin by preparing the pork belly. In a medium bowl, combine miso paste, soy sauce, mirin, sake, sugar, garlic, and ginger to create a marinade.
  2. Slice the pork belly into thick pieces (about 2-3 cm) and marinate them in the mixture for at least 30 minutes, preferably overnight in the refrigerator for deeper flavor.
  3. Preheat your oven to 160°C (320°F). Place the marinated pork belly in a baking dish, cover it with foil, and bake for 60 minutes.
  4. After 60 minutes, remove the foil and increase the temperature to 200°C (390°F). Bake for an additional 15 minutes or until the edges are crispy.
  5. While the pork is baking, prepare the rice according to package instructions. Once done, fluff and set aside.
  6. Once the pork is cooked, let it rest for a few minutes before slicing it into bite-sized pieces.
  7. To assemble the don, place a generous portion of rice in each bowl, top with sliced chashu (pork belly), chopped green onions, nori strips, and toasted sesame seeds.
  8. Serve immediately and enjoy your Miso Chashu Don!
