Ingredients

  • Spaghetti - 160 grams
  • Mentaiko (marinated cod roe) - 80 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Nori (seaweed) - 2 sheets, cut into strips
  • Chives (finely chopped) - 2 tablespoons
  • Butter - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon zest - 1 teaspoon

Steps

  1. Bring a pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil and butter in a large pan over medium heat.
  3. Add the minced garlic to the pan and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Once the spaghetti is cooked, reserve about 1/2 cup of the pasta water, then drain the pasta and add it to the pan with the garlic.
  5. Add the mentaiko to the pasta, stirring gently to combine. If the mixture is too dry, add reserved pasta water a little at a time until desired consistency is reached.
  6. Season with salt, black pepper, and lemon zest. Toss well to distribute the flavors.
  7. Remove from heat and serve immediately, garnished with nori strips and chopped chives.
