Ingredients

  • Cauliflower - 300 grams
  • Mentaiko (spicy cod roe) - 50 grams
  • Green onions - 2 stalks, finely chopped
  • Sesame oil - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Sea salt - to taste
  • Black pepper - to taste
  • Nori (seaweed) sheets - for garnish

Steps

  1. Remove the leaves from the cauliflower and cut it into smaller florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice grains.
  3. In a large skillet, heat the sesame oil over medium heat.
  4. Add the cauliflower rice to the skillet and stir-fry for about 5-7 minutes until tender.
  5. While the cauliflower is cooking, remove the mentaiko from its casing and place it in a small bowl.
  6. Add coconut aminos, sea salt, and black pepper to the mentaiko and mix well.
  7. Once the cauliflower rice is cooked, reduce the heat to low and add the mentaiko mixture to the skillet, stirring gently to combine.
  8. Incorporate the chopped green onions and mix until evenly distributed.
  9. Cook for an additional 2-3 minutes to heat everything through.
  10. Serve hot, garnished with torn nori sheets.
