- Cod fillet - 200 grams
- Mentaiko (cod roe) - 50 grams
- Panko breadcrumbs - 50 grams
- Mayonnaise - 2 tablespoons
- Soy sauce - 1 teaspoon
- Lemon juice - 1 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Buns (burger) - 2 pieces
- Lettuce leaves - 2 pieces
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Vegetable oil - for frying
Steps
- Start by finely chopping the cod fillet and placing it in a mixing bowl.
- Add the mentaiko, panko breadcrumbs, mayonnaise, soy sauce, lemon juice, salt, and black pepper to the bowl. Mix well until all ingredients are combined.
- Form the mixture into two equal-sized patties.
- Heat a skillet over medium heat and add vegetable oil. Once hot, carefully place the patties in the skillet.
- Cook the patties for about 4-5 minutes on each side, or until golden brown and fully cooked through.
- While the patties are cooking, prepare the buns by toasting them lightly in a separate pan or toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the fish patty, tomato slices, and cucumber slices.
- Top with the other half of the bun and serve immediately.
