Ingredients

  • Cod fillet - 200 grams
  • Mentaiko (cod roe) - 50 grams
  • Panko breadcrumbs - 50 grams
  • Mayonnaise - 2 tablespoons
  • Soy sauce - 1 teaspoon
  • Lemon juice - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Buns (burger) - 2 pieces
  • Lettuce leaves - 2 pieces
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Vegetable oil - for frying

Steps

  1. Start by finely chopping the cod fillet and placing it in a mixing bowl.
  2. Add the mentaiko, panko breadcrumbs, mayonnaise, soy sauce, lemon juice, salt, and black pepper to the bowl. Mix well until all ingredients are combined.
  3. Form the mixture into two equal-sized patties.
  4. Heat a skillet over medium heat and add vegetable oil. Once hot, carefully place the patties in the skillet.
  5. Cook the patties for about 4-5 minutes on each side, or until golden brown and fully cooked through.
  6. While the patties are cooking, prepare the buns by toasting them lightly in a separate pan or toaster.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the fish patty, tomato slices, and cucumber slices.
  8. Top with the other half of the bun and serve immediately.
