Ingredients

  • Miso marinated fish fillet (cod or salmon) - 200 grams
  • Panko breadcrumbs - 1/2 cup
  • Egg - 1 large
  • Mentaiko (spicy cod roe) - 2 tablespoons
  • Mayonnaise - 2 tablespoons
  • Whole grain burger buns - 2
  • Shredded cabbage - 1 cup
  • Cucumber, thinly sliced - 1/2 medium
  • Avocado, sliced - 1/2 medium
  • Soy sauce - 1 tablespoon
  • Lettuce leaves - 2
  • Sesame oil - 1 teaspoon
  • Salt and pepper to taste

Steps

  1. Preheat the grill or a non-stick skillet over medium heat.
  2. In a bowl, combine the miso marinated fish fillet, panko breadcrumbs, egg, salt, and pepper. Mix well until it forms a sticky mixture.
  3. Shape the mixture into two patties.
  4. Cook the patties on the grill or skillet for about 4-5 minutes on each side, or until golden brown and cooked through.
  5. While the patties are cooking, mix the mentaiko with mayonnaise in a small bowl to create a spicy sauce.
  6. Toast the whole grain burger buns lightly on the grill or in a toaster.
  7. Assemble the burgers by spreading the spicy mentaiko mayo on the bottom bun, placing a lettuce leaf, the cooked fish patty, sliced cucumber, and avocado on top.
  8. Finish with a sprinkle of soy sauce and close the burger with the top bun. Serve immediately with a side of fresh shredded cabbage.
