Ingredients

  • Mentaiko (spicy cod roe) - 100 grams
  • Cauliflower rice - 200 grams
  • Avocado - 1 medium, diced
  • Coconut aminos - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Chopped green onions - 2 tablespoons
  • Sea salt - to taste
  • Black sesame seeds - for garnish

Steps

  1. In a skillet over medium heat, add the cauliflower rice and sauté for about 5 minutes until tender, stirring occasionally.
  2. Remove the skillet from heat and mix in the coconut aminos, lemon juice, sesame oil, and sea salt to taste.
  3. In a bowl, combine the sautéed cauliflower rice and diced avocado, gently mixing to incorporate.
