- Chia seeds - 2 tablespoons (30 grams)
- Honey or maple syrup - 2 tablespoons (30 grams)
- Cornstarch - 1 tablespoon (8 grams)
- Vanilla extract - 1/2 teaspoon (2.5 ml)
- Salt - a pinch
Steps
- In a small bowl, mix matcha powder with a few tablespoons of almond milk to create a smooth paste.
- In a saucepan, combine the remaining almond milk, Greek yogurt, chia seeds, honey or maple syrup, cornstarch, vanilla extract, and salt.
- Heat the mixture over medium heat, stirring continuously until it begins to thicken, about 5-7 minutes.
- Once thickened, add the matcha paste to the saucepan and mix well until fully incorporated.
- Remove from heat and pour the pudding into serving cups.
