Ingredients

  • Matcha powder - 2 teaspoons (5 grams)
  • Almond milk - 1 cup (240 ml)
  • Greek yogurt - 1/2 cup (120 grams)
  • Chia seeds - 2 tablespoons (30 grams)
  • Honey or maple syrup - 2 tablespoons (30 grams)
  • Cornstarch - 1 tablespoon (8 grams)
  • Vanilla extract - 1/2 teaspoon (2.5 ml)
  • Salt - a pinch

Steps

  1. In a small bowl, mix matcha powder with a few tablespoons of almond milk to create a smooth paste.
  2. In a saucepan, combine the remaining almond milk, Greek yogurt, chia seeds, honey or maple syrup, cornstarch, vanilla extract, and salt.
  3. Heat the mixture over medium heat, stirring continuously until it begins to thicken, about 5-7 minutes.
  4. Once thickened, add the matcha paste to the saucepan and mix well until fully incorporated.
  5. Remove from heat and pour the pudding into serving cups.
  6. Chill in the refrigerator for at least 2 hours before serving. Enjoy!
