- Chickpeas - 240 grams (1 can, drained and rinsed)
- Matcha powder - 2 teaspoons
- Oats - 50 grams (1/2 cup, ground into flour)
- Green onion - 2 tablespoons (finely chopped)
- Garlic - 1 clove (minced)
- Ginger - 1 teaspoon (grated)
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2 (vegan)
- Lettuce - 2 leaves
- Tomato - 1 (sliced)
- Cucumber - 1/2 (sliced)
- Miso paste - 1 tablespoon (for mayo)
- Vegan mayo - 2 tablespoons
Steps
- In a large bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add matcha powder, ground oats, chopped green onion, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper to the mashed chickpeas. Mix until well combined.
- Form the mixture into two burger patties of equal size.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown and crispy.
- While the burgers are cooking, prepare the miso mayo by mixing the miso paste and vegan mayo in a small bowl until smooth.
- Toast the burger buns lightly if desired. Assemble the burgers by spreading miso mayo on the bottom bun, adding a lettuce leaf, followed by the chickpea burger patty, tomato slice, and cucumber slices. Top with the other half of the bun.
