Ingredients

  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Matcha powder - 2 teaspoons
  • Oats - 50 grams (1/2 cup, ground into flour)
  • Green onion - 2 tablespoons (finely chopped)
  • Garlic - 1 clove (minced)
  • Ginger - 1 teaspoon (grated)
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2 (vegan)
  • Lettuce - 2 leaves
  • Tomato - 1 (sliced)
  • Cucumber - 1/2 (sliced)
  • Miso paste - 1 tablespoon (for mayo)
  • Vegan mayo - 2 tablespoons

Steps

  1. In a large bowl, mash the drained chickpeas using a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add matcha powder, ground oats, chopped green onion, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into two burger patties of equal size.
  4. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side until golden brown and crispy.
  5. While the burgers are cooking, prepare the miso mayo by mixing the miso paste and vegan mayo in a small bowl until smooth.
  6. Toast the burger buns lightly if desired. Assemble the burgers by spreading miso mayo on the bottom bun, adding a lettuce leaf, followed by the chickpea burger patty, tomato slice, and cucumber slices. Top with the other half of the bun.
