Ingredients

  • Cream cheese - 200 grams
  • Greek yogurt - 100 grams
  • Matcha powder - 2 teaspoons
  • Honey - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Egg - 1 large
  • Almond flour - 50 grams
  • Butter - 30 grams (melted)
  • Salt - a pinch

Steps

  1. Preheat your oven to 160°C (320°F).
  2. In a mixing bowl, combine the cream cheese, Greek yogurt, matcha powder, honey, vanilla extract, and egg. Beat until smooth and creamy.
  3. In another bowl, mix the almond flour, melted butter, and a pinch of salt to form a crumbly crust mixture.
  4. Press the crust mixture evenly into the bottom of two small, greased springform pans.
  5. Pour the matcha cream cheese mixture over the crusts in the pans, spreading evenly.
  6. Bake in the preheated oven for 30 minutes or until the center is set but slightly jiggly.
  7. Turn off the oven, crack the door open, and let the cheesecakes cool in the oven for 15 minutes.
  8. Remove from the oven and let them cool to room temperature before refrigerating for at least 2 hours.
  9. Serve chilled, optionally garnished with a dusting of matcha powder or fresh berries.
