- Greek yogurt - 100 grams
- Matcha powder - 2 teaspoons
- Honey - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Egg - 1 large
- Almond flour - 50 grams
- Butter - 30 grams (melted)
- Salt - a pinch
Steps
- Preheat your oven to 160°C (320°F).
- In a mixing bowl, combine the cream cheese, Greek yogurt, matcha powder, honey, vanilla extract, and egg. Beat until smooth and creamy.
- In another bowl, mix the almond flour, melted butter, and a pinch of salt to form a crumbly crust mixture.
- Press the crust mixture evenly into the bottom of two small, greased springform pans.
- Pour the matcha cream cheese mixture over the crusts in the pans, spreading evenly.
- Bake in the preheated oven for 30 minutes or until the center is set but slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecakes cool in the oven for 15 minutes.
- Remove from the oven and let them cool to room temperature before refrigerating for at least 2 hours.
- Serve chilled, optionally garnished with a dusting of matcha powder or fresh berries.
