  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Oats - 30 grams, ground into flour
  • Cornstarch - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for cooking
  • Whole grain burger buns - 2
  • Avocado - 1, sliced
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Vegan mayo - for spreading

Steps

  1. In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the cooked quinoa, grated carrot, chopped green onions, minced garlic, grated ginger, matcha powder, soy sauce, ground oats, cornstarch, salt, and black pepper to the bowl. Mix until well combined.
  3. Form the mixture into two equal patties, ensuring they hold together well.
  4. Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
  5. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. Meanwhile, toast the whole grain burger buns in a toaster or on a skillet until lightly browned.
