Ingredients
- Adzuki beans - 100 grams, dried
- Water - 500 ml, for soaking and cooking
- Soy sauce - 30 ml
- Mirin - 20 ml
- Sugar - 10 grams
- Sake - 15 ml
- Ginger - 5 grams, sliced
- Green onions - 1 stalk, chopped for garnish
Steps
- Rinse the adzuki beans under cold water and soak them in 500 ml of water for at least 6 hours or overnight.
- After soaking, drain the beans and transfer them to a pot. Add 500 ml of fresh water and bring to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes, or until the beans are tender but not mushy. Drain any excess water.
- In the same pot, add the soy sauce, mirin, sugar, sake, and sliced ginger to the cooked beans.
- Stir well to combine and bring the mixture to a gentle simmer over low heat. Cover and cook for an additional 20 minutes, stirring occasionally.
- Remove the lid and continue to simmer for another 10 minutes, allowing the sauce to thicken slightly.
- Once done, remove from heat and let it cool slightly before serving. Garnish with chopped green onions.
