  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the Japanese eggplants in half lengthwise and score the flesh in a crisscross pattern.
  3. In a small bowl, whisk together soy sauce, miso paste, maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger to create a marinade.
  4. Brush the marinade generously over the cut sides of the eggplants.
  5. Place the eggplant halves on a baking sheet, cut side up, and roast in the preheated oven for about 20 minutes, or until tender and slightly caramelized.
  6. Remove the eggplants from the oven and sprinkle with chopped green onions and toasted sesame seeds before serving.
