Ingredients

  • Glutinous rice flour - 100 grams
  • Water - 150 ml
  • Sugar - 30 grams
  • Cooked adzuki beans - 100 grams
  • Maple syrup - 1 tablespoon
  • Cornstarch - 30 grams (for dusting)
  • Salt - a pinch

Steps

  1. In a bowl, mix glutinous rice flour, sugar, and a pinch of salt.
  2. Gradually add water to the dry ingredients, stirring until smooth.
  3. Transfer the mixture to a microwave-safe bowl and cover it with a damp cloth.
  4. Microwave on high for 2 minutes, stir, then microwave for an additional 1-2 minutes until the mixture becomes sticky and translucent.
  5. Let it cool slightly before dusting your work surface with cornstarch.
  6. Turn the mochi mixture onto the cornstarch-dusted surface and flatten it out to about 1 cm thick.
  7. Cut the mochi into squares or circles, depending on your preference.
  8. In a separate bowl, mash the cooked adzuki beans with maple syrup until smooth.
  9. Take a piece of mochi, flatten it slightly, and place a spoonful of the adzuki bean mixture in the center.
  10. Fold the mochi over the filling and pinch to seal, shaping it into a ball or disc.
  11. Repeat with the remaining mochi and filling.
  12. Dust the finished Mame Daifuku with additional cornstarch to prevent sticking.
