Steps
- In a bowl, mix glutinous rice flour, sugar, and a pinch of salt.
- Gradually add water to the dry ingredients, stirring until smooth.
- Transfer the mixture to a microwave-safe bowl and cover it with a damp cloth.
- Microwave on high for 2 minutes, stir, then microwave for an additional 1-2 minutes until the mixture becomes sticky and translucent.
- Let it cool slightly before dusting your work surface with cornstarch.
- Turn the mochi mixture onto the cornstarch-dusted surface and flatten it out to about 1 cm thick.
- Cut the mochi into squares or circles, depending on your preference.
- In a separate bowl, mash the cooked adzuki beans with maple syrup until smooth.
- Take a piece of mochi, flatten it slightly, and place a spoonful of the adzuki bean mixture in the center.
- Fold the mochi over the filling and pinch to seal, shaping it into a ball or disc.
- Repeat with the remaining mochi and filling.
- Dust the finished Mame Daifuku with additional cornstarch to prevent sticking.
