Ingredients

  • Agar-agar powder - 2 grams
  • Sugar - 30 grams
  • Lemon juice - 1 tablespoon
  • Honey (or agave syrup for vegan option) - 1 tablespoon

Steps

  1. Wash the Kyoho grapes thoroughly and remove the stems. Reserve a few for garnish.
  2. In a blender, puree the grapes until smooth. Strain the puree through a fine sieve into a bowl to remove the seeds and skins, pressing down to extract as much juice as possible.
  3. In a saucepan, combine the grape juice, water, sugar, lemon juice, and honey. Stir well to combine.
  4. Sprinkle the agar-agar powder evenly over the mixture and let it sit for about 5 minutes to hydrate.
  5. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly until the agar-agar is completely dissolved (about 5-7 minutes).
  6. Remove from heat and allow the mixture to cool slightly before pouring it into two serving molds or glasses.
  7. Refrigerate for at least 2 hours or until set.
  8. Once set, carefully unmold the jelly onto a plate or serve directly in the glasses. Garnish with reserved Kyoho grapes.
