Ingredients

  • Eggs - 2 large
  • Honey - 30 grams
  • Matcha powder - 10 grams
  • Almond flour - 50 grams
  • Coconut flour - 20 grams
  • Baking powder - 1 teaspoon
  • Coconut oil - 20 grams, melted
  • Milk (or plant-based) - 50 milliliters
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a small round cake pan with parchment paper.
  2. In a mixing bowl, whisk together the eggs and honey until frothy.
  3. Add the matcha powder, almond flour, coconut flour, and baking powder to the egg mixture, stirring until well combined.
  4. Slowly mix in the melted coconut oil, milk, and vanilla extract until the batter is smooth.
  5. Pour half of the batter into the prepared cake pan and spread it evenly.
  6. Bake for 10 minutes, then remove from the oven and let it cool slightly.
  7. Pour the remaining batter on top of the first layer and smooth it out.
  8. Return to the oven and bake for an additional 15-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool completely in the pan before removing and slicing.
  10. Serve in thin slices, optionally dusted with additional matcha powder for garnish.
