- Honey - 30 grams
- Matcha powder - 10 grams
- Almond flour - 50 grams
- Coconut flour - 20 grams
- Baking powder - 1 teaspoon
- Coconut oil - 20 grams, melted
- Milk (or plant-based) - 50 milliliters
- Vanilla extract - 1 teaspoon
Steps
- Preheat your oven to 180°C (350°F) and line a small round cake pan with parchment paper.
- In a mixing bowl, whisk together the eggs and honey until frothy.
- Add the matcha powder, almond flour, coconut flour, and baking powder to the egg mixture, stirring until well combined.
- Slowly mix in the melted coconut oil, milk, and vanilla extract until the batter is smooth.
- Pour half of the batter into the prepared cake pan and spread it evenly.
- Bake for 10 minutes, then remove from the oven and let it cool slightly.
- Pour the remaining batter on top of the first layer and smooth it out.
- Return to the oven and bake for an additional 15-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely in the pan before removing and slicing.
- Serve in thin slices, optionally dusted with additional matcha powder for garnish.
