  • Coconut milk - 100 ml
  • Salt - a pinch

Steps

  1. Peel the Japanese sweet potato and cut it into small cubes.
  2. In a pot, bring 500 ml of water to a boil and add the sweet potato cubes.
  3. Cook the sweet potatoes for 15-20 minutes or until they are tender.
  4. Once cooked, drain the sweet potatoes and mash them with a fork or a masher until smooth.
  5. In a separate bowl, dissolve the kuzu starch in a small amount of cold water to create a slurry.
  6. Return the mashed sweet potatoes to the pot, add the brown sugar, coconut milk, and salt, and stir well.
  7. Gradually add the kuzu slurry to the pot while stirring continuously to avoid lumps.
  8. Cook the mixture over low heat, stirring constantly, until it thickens to your desired consistency (about 5-7 minutes).
  9. Remove from heat and let it cool slightly before serving.
