- Kuzu starch - 30 grams
- Water - 400 milliliters
- Maple syrup - 2 tablespoons
- Matcha powder - 1 teaspoon
- Vanilla extract - 1/2 teaspoon
- Coconut milk - 100 milliliters
- Chopped fruits (such as strawberries or bananas) - 50 grams
Steps
- In a small bowl, mix the kuzu starch with 100 milliliters of cold water until completely dissolved.
- In a saucepan, combine the remaining 300 milliliters of water, maple syrup, matcha powder, and vanilla extract. Heat over medium heat, stirring until well blended.
- Once the mixture is hot, gradually pour in the kuzu solution while continuously stirring to prevent lumps from forming.
- Continue to cook the mixture, stirring constantly, until it thickens and becomes translucent, about 3-5 minutes.
- Remove from heat and stir in the coconut milk until well combined.
- Pour the kuzuyu into serving bowls and allow it to cool for a few minutes.
- Top with chopped fruits before serving. Enjoy your vegan kuzuyu warm or chilled!
