Ingredients

  • Kuzu starch - 30 grams
  • Water - 400 milliliters
  • Maple syrup - 2 tablespoons
  • Matcha powder - 1 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Coconut milk - 100 milliliters
  • Chopped fruits (such as strawberries or bananas) - 50 grams

Steps

  1. In a small bowl, mix the kuzu starch with 100 milliliters of cold water until completely dissolved.
  2. In a saucepan, combine the remaining 300 milliliters of water, maple syrup, matcha powder, and vanilla extract. Heat over medium heat, stirring until well blended.
  3. Once the mixture is hot, gradually pour in the kuzu solution while continuously stirring to prevent lumps from forming.
  4. Continue to cook the mixture, stirring constantly, until it thickens and becomes translucent, about 3-5 minutes.
  5. Remove from heat and stir in the coconut milk until well combined.
  6. Pour the kuzuyu into serving bowls and allow it to cool for a few minutes.
  7. Top with chopped fruits before serving. Enjoy your vegan kuzuyu warm or chilled!
