Ingredients

  • Kudzu starch - 30 grams
  • Water - 250 ml
  • Sugar - 40 grams
  • Soy sauce - 1 teaspoon
  • Maple syrup - 2 tablespoons
  • Cornstarch - 1 tablespoon (for dusting)
  • Kinako (roasted soybean flour) - 2 tablespoons (optional)

Steps

  1. In a saucepan, mix the kudzu starch with 250 ml of water until smooth.
  2. Heat the mixture over medium heat, stirring constantly until it thickens and becomes translucent, about 10-15 minutes.
  3. Once thickened, pour the mixture into a lightly greased mold or container and let it cool at room temperature for about 10 minutes.
  4. Once cooled, cut the kudzu mixture into small squares or rectangles.
  5. In another saucepan, combine sugar, soy sauce, and maple syrup with 50 ml of water. Heat over low until the sugar dissolves, then set aside.
  6. Dust the kuzumochi pieces with cornstarch to prevent sticking.
  7. Serve the kuzumochi warm or at room temperature, drizzled with the syrup and sprinkled with kinako if desired.
