Ingredients
- Kudzu starch - 30 grams
- Water - 250 ml
- Sugar - 40 grams
- Soy sauce - 1 teaspoon
- Maple syrup - 2 tablespoons
- Cornstarch - 1 tablespoon (for dusting)
- Kinako (roasted soybean flour) - 2 tablespoons (optional)
Steps
- In a saucepan, mix the kudzu starch with 250 ml of water until smooth.
- Heat the mixture over medium heat, stirring constantly until it thickens and becomes translucent, about 10-15 minutes.
- Once thickened, pour the mixture into a lightly greased mold or container and let it cool at room temperature for about 10 minutes.
- Once cooled, cut the kudzu mixture into small squares or rectangles.
- In another saucepan, combine sugar, soy sauce, and maple syrup with 50 ml of water. Heat over low until the sugar dissolves, then set aside.
- Dust the kuzumochi pieces with cornstarch to prevent sticking.
- Serve the kuzumochi warm or at room temperature, drizzled with the syrup and sprinkled with kinako if desired.
