- Kudzu starch - 50 grams
- Water - 300 ml
- Maple syrup - 2 tablespoons
- Soy sauce (or coconut aminos for paleo) - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Fresh fruit (like strawberries or mango) - 100 grams
Steps
- In a saucepan, combine 50 grams of kudzu starch with 300 ml of water and stir until the starch is fully dissolved.
- Place the saucepan over medium heat and continuously stir the mixture until it thickens and becomes translucent, which should take about 5-7 minutes.
- Once thickened, pour the mixture into a mold or a shallow dish and let it cool for about 10 minutes at room temperature.
- While the kudzu mixture is cooling, prepare the syrup by mixing 2 tablespoons of maple syrup with 1 teaspoon of soy sauce or coconut aminos in a small bowl.
- Once cooled, cut the kudzu into thin noodles using a knife or a spatula.
- Serve the noodles in a bowl, drizzle the prepared syrup over them, and garnish with sesame seeds and fresh fruit.
