Ingredients

  • Kudzu starch - 50 grams
  • Water - 300 ml
  • Maple syrup - 2 tablespoons
  • Soy sauce (or coconut aminos for paleo) - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Fresh fruit (like strawberries or mango) - 100 grams

Steps

  1. In a saucepan, combine 50 grams of kudzu starch with 300 ml of water and stir until the starch is fully dissolved.
  2. Place the saucepan over medium heat and continuously stir the mixture until it thickens and becomes translucent, which should take about 5-7 minutes.
  3. Once thickened, pour the mixture into a mold or a shallow dish and let it cool for about 10 minutes at room temperature.
  4. While the kudzu mixture is cooling, prepare the syrup by mixing 2 tablespoons of maple syrup with 1 teaspoon of soy sauce or coconut aminos in a small bowl.
  5. Once cooled, cut the kudzu into thin noodles using a knife or a spatula.
  6. Serve the noodles in a bowl, drizzle the prepared syrup over them, and garnish with sesame seeds and fresh fruit.
