Ingredients

  • Kuzu starch - 50 grams
  • Water - 500 ml
  • Honey - 30 grams
  • Lemon juice - 15 ml
  • Salt - a pinch

Steps

  1. In a medium saucepan, combine the kuzu starch and 100 ml of water, stirring until the starch is fully dissolved.
  2. In another saucepan, bring the remaining 400 ml of water to a gentle boil.
  3. Slowly pour the dissolved kuzu mixture into the boiling water while continuously stirring.
  4. Reduce the heat to low and cook for about 5 minutes, continuing to stir, until the mixture thickens and becomes translucent.
  5. Remove the saucepan from heat and stir in honey, lemon juice, and a pinch of salt until well combined.
  6. Allow the mixture to cool to room temperature, then pour it into a shallow container.
  7. Cover and place the container in the freezer for at least 2 hours, or until the mixture is completely frozen.
  8. Once frozen, scrape the sorbet with a fork to create a fluffy texture and serve immediately.
