Ingredients

  • Kuzu starch - 30 grams
  • Water - 250 milliliters
  • Sugar - 20 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Toppings (such as fresh fruit or sweet syrup) - as desired

Steps

  1. In a small bowl, mix the kuzu starch with 50 milliliters of cold water until smooth.
  2. In a saucepan, combine the remaining 200 milliliters of water, sugar, and a pinch of salt. Heat over medium heat until the sugar is dissolved.
  3. Once the sugar is dissolved, slowly pour the kuzu mixture into the saucepan while constantly stirring to prevent lumps.
  4. Continue to cook, stirring gently, until the mixture thickens and becomes translucent, about 5-7 minutes.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the pudding into two small serving bowls or cups and let it cool to room temperature.
  7. Once cooled, refrigerate the pudding for at least 1 hour to set.
  8. Serve chilled, optionally topped with fresh fruit or sweet syrup.
