Ingredients

- Sweetened red bean paste - 50 grams
- Matcha powder - 1 teaspoon
- Roasted soy flour (kinako) - 1 tablespoon
Steps
- In a saucepan, combine 30 grams of kuzu starch and 300 ml of water, stirring until smooth.
- Heat the mixture over medium heat, stirring continuously until it thickens and becomes transparent, about 5-7 minutes.
- Remove from heat and pour the kuzu mixture into a mold or shallow dish, smoothing the top. Allow it to cool at room temperature for about 10 minutes, then refrigerate until set, approximately 1 hour.
- While the kuzu jelly is setting, prepare the fruits by washing and cutting them into bite-sized pieces.
- Once the kuzu has set, cut it into cubes or desired shapes.
- In serving glasses, layer the kuzu jelly cubes, followed by a layer of sweetened red bean paste, and then a layer of mixed seasonal fruits.
- Dust the top with matcha powder and roasted soy flour (kinako) for added flavor and presentation.
- Serve immediately or chill for a further 15 minutes before serving.
