Steps

  1. In a small saucepan, mix the kudzu starch with 100 ml of water until fully dissolved.
  2. In another saucepan, bring the remaining 200 ml of water to a gentle boil.
  3. Gradually add the kudzu mixture to the boiling water, stirring continuously with a whisk until the mixture thickens and is translucent, about 5-7 minutes.
  4. Remove the saucepan from heat and let the mixture cool slightly before pouring it into serving bowls or molds.
  5. While the kudzu noodles are cooling, prepare the sweet syrup by mixing maple syrup and matcha powder in a small bowl until well combined.
  6. Once the kudzu noodles have set and cooled, top them with the fresh fruit and drizzle with the matcha syrup.
  7. Garnish with edible flowers if desired and serve immediately.
