Ingredients

  • Kudzu starch - 50 grams
  • All-purpose flour - 50 grams
  • Matcha powder - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Maple syrup - 30 ml
  • Milk (or plant-based milk) - 100 ml
  • Vegetable oil - 20 ml
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the kudzu starch, all-purpose flour, matcha powder, baking powder, and salt.
  3. In a separate bowl, whisk together the maple syrup, milk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined; do not overmix.
  5. Spoon the batter evenly into the prepared muffin tin, filling each liner about 2/3 full.
  6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
