- Maple syrup - 30 ml
- Milk (or plant-based milk) - 100 ml
- Vegetable oil - 20 ml
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
- In a mixing bowl, combine the kudzu starch, all-purpose flour, matcha powder, baking powder, and salt.
- In a separate bowl, whisk together the maple syrup, milk, vegetable oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix gently until just combined; do not overmix.
- Spoon the batter evenly into the prepared muffin tin, filling each liner about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
