- Kuzu starch - 30 grams
- Water - 200 ml
- Maple syrup - 30 ml
- Soy milk - 100 ml
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Fresh berries (for garnish) - 50 grams
Steps
- In a small saucepan, combine the kuzu starch and 100 ml of water, stirring until smooth.
- Place the saucepan over medium heat and gradually add the remaining 100 ml of water, continuously stirring until the mixture thickens and becomes translucent.
- Remove from heat and stir in the maple syrup, soy milk, vanilla extract, and a pinch of salt until fully incorporated.
- Transfer the mixture to a bowl and let it cool slightly before whisking it vigorously to incorporate air, creating a light and fluffy texture.
- Pour the mousse into two serving cups and refrigerate for at least 2 hours to set.
- Before serving, garnish with fresh berries.
