Ingredients

  • Kuzu starch - 30 grams
  • Water - 200 ml
  • Maple syrup - 30 ml
  • Soy milk - 100 ml
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Fresh berries (for garnish) - 50 grams

Steps

  1. In a small saucepan, combine the kuzu starch and 100 ml of water, stirring until smooth.
  2. Place the saucepan over medium heat and gradually add the remaining 100 ml of water, continuously stirring until the mixture thickens and becomes translucent.
  3. Remove from heat and stir in the maple syrup, soy milk, vanilla extract, and a pinch of salt until fully incorporated.
  4. Transfer the mixture to a bowl and let it cool slightly before whisking it vigorously to incorporate air, creating a light and fluffy texture.
  5. Pour the mousse into two serving cups and refrigerate for at least 2 hours to set.
  6. Before serving, garnish with fresh berries.
