- Kuzu starch - 40 grams
- Water - 200 ml
- Sugar - 30 grams
- Coconut milk - 100 ml
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- In a small saucepan, combine the kuzu starch and 100 ml of water, stirring until the kuzu is fully dissolved.
- In a separate saucepan, heat the remaining 100 ml of water and sugar over medium heat until the sugar is dissolved.
- Gradually add the kuzu mixture to the sugar water while continuously stirring to prevent lumps.
- Continue to cook the mixture over low heat, stirring constantly, until it thickens and becomes translucent (about 5-7 minutes).
- Remove from heat and stir in the coconut milk, vanilla extract, and a pinch of salt until well combined.
- Pour the mixture into a shallow container and let it cool to room temperature.
- Once cooled, place the container in the freezer for about 2 hours, or until partially frozen.
- After 2 hours, remove from the freezer and use a fork to break up the ice crystals, stirring the mixture well.
- Return to the freezer for another 1-2 hours until fully frozen.
- Serve in small bowls and enjoy your homemade kuzu ice cream!
