Ingredients

  • Kuzu starch - 40 grams
  • Water - 200 ml
  • Sugar - 30 grams
  • Coconut milk - 100 ml
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a small saucepan, combine the kuzu starch and 100 ml of water, stirring until the kuzu is fully dissolved.
  2. In a separate saucepan, heat the remaining 100 ml of water and sugar over medium heat until the sugar is dissolved.
  3. Gradually add the kuzu mixture to the sugar water while continuously stirring to prevent lumps.
  4. Continue to cook the mixture over low heat, stirring constantly, until it thickens and becomes translucent (about 5-7 minutes).
  5. Remove from heat and stir in the coconut milk, vanilla extract, and a pinch of salt until well combined.
  6. Pour the mixture into a shallow container and let it cool to room temperature.
  7. Once cooled, place the container in the freezer for about 2 hours, or until partially frozen.
  8. After 2 hours, remove from the freezer and use a fork to break up the ice crystals, stirring the mixture well.
  9. Return to the freezer for another 1-2 hours until fully frozen.
  10. Serve in small bowls and enjoy your homemade kuzu ice cream!
