Ingredients
- Udon noodles - 200 grams
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, cut into chunks
- Shiitake mushrooms - 100 grams, stems removed
- Red onion - 1 small, cut into chunks
- Teriyaki sauce - 4 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon
- Green onions - 2, chopped for garnish
Steps
- Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 8-10 minutes. Drain and set aside.
- While the noodles are cooking, prepare the vegetables for skewering. Alternate threading zucchini, bell pepper, shiitake mushrooms, and red onion onto skewers.
- In a bowl, mix sesame oil, olive oil, salt, and black pepper. Brush this mixture onto the vegetable skewers.
- Preheat a grill or grill pan over medium heat. Grill the vegetable skewers for about 5-7 minutes on each side, or until they are tender and slightly charred.
- Once the vegetables are grilled, remove them from the skewers and set aside.
- In a large pan, combine the cooked udon noodles and teriyaki sauce. Toss to coat the noodles evenly and heat for about 2-3 minutes over medium heat.
- Add the grilled vegetables to the pan with the udon noodles and toss gently to combine.
- Serve the Kushiyaki Udon hot, garnished with sesame seeds and chopped green onions.
