Ingredients

  • Udon noodles - 200 grams
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, cut into chunks
  • Shiitake mushrooms - 100 grams, stems removed
  • Red onion - 1 small, cut into chunks
  • Teriyaki sauce - 4 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, chopped for garnish

Steps

  1. Bring a pot of water to a boil. Add the udon noodles and cook according to package instructions, usually about 8-10 minutes. Drain and set aside.
  2. While the noodles are cooking, prepare the vegetables for skewering. Alternate threading zucchini, bell pepper, shiitake mushrooms, and red onion onto skewers.
  3. In a bowl, mix sesame oil, olive oil, salt, and black pepper. Brush this mixture onto the vegetable skewers.
  4. Preheat a grill or grill pan over medium heat. Grill the vegetable skewers for about 5-7 minutes on each side, or until they are tender and slightly charred.
  5. Once the vegetables are grilled, remove them from the skewers and set aside.
  6. In a large pan, combine the cooked udon noodles and teriyaki sauce. Toss to coat the noodles evenly and heat for about 2-3 minutes over medium heat.
  7. Add the grilled vegetables to the pan with the udon noodles and toss gently to combine.
  8. Serve the Kushiyaki Udon hot, garnished with sesame seeds and chopped green onions.
