Ingredients
- Chicken breast - 200 grams, cut into 2.5 cm cubes
- Bell pepper - 1 medium, cut into 2.5 cm pieces
- Zucchini - 1 medium, sliced into rounds
- Soy sauce (Kosher) - 3 tablespoons
- Mirin (sweet rice wine) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Black pepper - 1/2 teaspoon
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- In a bowl, combine soy sauce, mirin, sesame oil, minced garlic, grated ginger, and black pepper to make the marinade.
- Add the chicken cubes to the marinade, cover, and let them marinate in the refrigerator for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by cutting them into appropriate sizes.
- After marinating, thread the chicken, bell pepper, and zucchini onto the soaked wooden skewers alternately.
- Preheat a grill or grill pan over medium-high heat.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
