Ingredients

  • Chicken breast - 200 grams, cut into 2.5 cm cubes
  • Bell pepper - 1 medium, cut into 2.5 cm pieces
  • Zucchini - 1 medium, sliced into rounds
  • Soy sauce (Kosher) - 3 tablespoons
  • Mirin (sweet rice wine) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Black pepper - 1/2 teaspoon
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a bowl, combine soy sauce, mirin, sesame oil, minced garlic, grated ginger, and black pepper to make the marinade.
  2. Add the chicken cubes to the marinade, cover, and let them marinate in the refrigerator for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables by cutting them into appropriate sizes.
  4. After marinating, thread the chicken, bell pepper, and zucchini onto the soaked wooden skewers alternately.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
