- Zucchini - 1 medium, sliced into thick rounds
- Mushrooms - 100 grams, whole or halved
- Green onion - 2 stalks, cut into 5 cm lengths
- Olive oil - 2 tablespoons
- Coconut aminos - 4 tablespoons
- Fresh ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Bamboo skewers - 4, soaked in water for 30 minutes
Steps
- In a bowl, combine olive oil, coconut aminos, grated ginger, minced garlic, salt, and black pepper to create a marinade.
- Add chicken and pork cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- While the meat is marinating, prepare the vegetables by cutting them into the specified sizes.
- After marinating, assemble the skewers by alternately threading the chicken, pork, bell pepper, zucchini, mushrooms, and green onion onto the soaked bamboo skewers.
- Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill.
- Cook for about 10-12 minutes, turning occasionally until the meat is cooked through and the vegetables are tender and slightly charred.
- Remove skewers from the grill and let them rest for a couple of minutes before serving.
