Ingredients

  • Red bell pepper - 1 medium, cut into 2 cm pieces
  • Zucchini - 1 medium, sliced into thick rounds
  • Mushrooms - 100 grams, whole or halved
  • Green onion - 2 stalks, cut into 5 cm lengths
  • Olive oil - 2 tablespoons
  • Coconut aminos - 4 tablespoons
  • Fresh ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bamboo skewers - 4, soaked in water for 30 minutes

Steps

  1. In a bowl, combine olive oil, coconut aminos, grated ginger, minced garlic, salt, and black pepper to create a marinade.
  2. Add chicken and pork cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. While the meat is marinating, prepare the vegetables by cutting them into the specified sizes.
  4. After marinating, assemble the skewers by alternately threading the chicken, pork, bell pepper, zucchini, mushrooms, and green onion onto the soaked bamboo skewers.
  5. Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill.
  6. Cook for about 10-12 minutes, turning occasionally until the meat is cooked through and the vegetables are tender and slightly charred.
  7. Remove skewers from the grill and let them rest for a couple of minutes before serving.
