  • Mirin - 2 tablespoons
  • Sake - 1 tablespoon (ensure kosher)
  • Brown sugar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bamboo skewers - 4, soaked in water for 30 minutes

Steps

  1. In a mixing bowl, combine soy sauce, mirin, sake, brown sugar, sesame oil, salt, and black pepper to create a marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated, and let them marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables by cutting the zucchini, red bell pepper, and shallot as specified.
