- Mirin - 2 tablespoons
- Sake - 1 tablespoon (ensure kosher)
- Brown sugar - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Bamboo skewers - 4, soaked in water for 30 minutes
Steps
- In a mixing bowl, combine soy sauce, mirin, sake, brown sugar, sesame oil, salt, and black pepper to create a marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated, and let them marinate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by cutting the zucchini, red bell pepper, and shallot as specified.
- After marinating, thread the chicken and vegetables onto the soaked bamboo skewers, alternating between chicken and veggies.
- Preheat a grill or grill pan over medium-high heat.
