- Soy sauce (kosher) - 60 ml
- Mirin (kosher) - 30 ml
- Sesame oil - 15 ml
- Honey - 1 tablespoon (15 grams)
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Salt - to taste
- Black pepper - to taste
- Wooden skewers - 4 (soaked in water for 30 minutes)
Steps
- In a medium bowl, whisk together soy sauce, mirin, sesame oil, honey, minced garlic, grated ginger, salt, and black pepper to create the marinade.
- Add the chicken cubes to the marinade and let it sit for at least 15 minutes to absorb the flavors.
- While the chicken is marinating, prepare the vegetables by cutting them into the specified sizes.
- Once marinated, thread the chicken, bell pepper, zucchini, and red onion onto the soaked skewers, alternating between the chicken and vegetables.
- Preheat a grill or grill pan over medium-high heat.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove skewers from the grill and allow to rest for a few minutes before serving.
- Serve hot with steamed rice or a side salad.
