Ingredients

  • Zucchini - 1 medium, sliced into 1 cm rounds
  • Red onion - 1 small, cut into 2.5 cm squares
  • Soy sauce (kosher) - 60 ml
  • Mirin (kosher) - 30 ml
  • Sesame oil - 15 ml
  • Honey - 1 tablespoon (15 grams)
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Salt - to taste
  • Black pepper - to taste
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a medium bowl, whisk together soy sauce, mirin, sesame oil, honey, minced garlic, grated ginger, salt, and black pepper to create the marinade.
  2. Add the chicken cubes to the marinade and let it sit for at least 15 minutes to absorb the flavors.
  3. While the chicken is marinating, prepare the vegetables by cutting them into the specified sizes.
  4. Once marinated, thread the chicken, bell pepper, zucchini, and red onion onto the soaked skewers, alternating between the chicken and vegetables.
  5. Preheat a grill or grill pan over medium-high heat.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove skewers from the grill and allow to rest for a few minutes before serving.
  8. Serve hot with steamed rice or a side salad.
