- Shiitake mushrooms - 100 grams, stems removed
- Soy sauce - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Black pepper - 1/2 teaspoon
- Green onions - 2 stalks, chopped for garnish
- Skewers - 4 (soaked in water for 30 minutes if wooden)
Steps
- In a bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, and black pepper to make the marinade.
- Add the cubed chicken to the marinade and let it sit for 15 minutes to absorb the flavors.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated chicken, zucchini rounds, red bell pepper squares, and shiitake mushrooms onto the skewers, alternating between ingredients.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a couple of minutes.
- Garnish with chopped green onions before serving.
