  • Shiitake mushrooms - 100 grams, stems removed
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Black pepper - 1/2 teaspoon
  • Green onions - 2 stalks, chopped for garnish
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. In a bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, and black pepper to make the marinade.
  2. Add the cubed chicken to the marinade and let it sit for 15 minutes to absorb the flavors.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Thread the marinated chicken, zucchini rounds, red bell pepper squares, and shiitake mushrooms onto the skewers, alternating between ingredients.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove the skewers from the grill and let them rest for a couple of minutes.
  7. Garnish with chopped green onions before serving.
